Product description
Biova organic long pepper comes from Indonesia and is supplied as whole pepper spikes measuring 2–5 cm. The slender, black-grey catkins are known as a distinctive, intensely aromatic pepper spice.
Controlled organic cultivation, careful hand selection and gentle drying result in consistently high quality, a warm heat and a sweet-spicy aroma. Supplied in bulk, it is ideal for professional kitchens and commercial processing.
In the kitchen, long pepper is extremely versatile – from braises and curries to desserts and hot drinks. Use the spikes whole, broken or freshly crushed to season dishes with Biova’s typical cinnamon-warm heat.
Origin
This organic pepper is grown in Indonesia, where the tropical climate, high humidity and nutrient-rich soils provide ideal conditions. Under these circumstances it develops its characteristic sweet-spicy aroma with warm heat.
Cultivation / production / harvest
The climbing pepper plants grow on supports or trees and are tended under controlled organic cultivation. The 2–5 cm long spikes are harvested by hand, gently sun- or air-dried and then selected as whole catkins before Biova packs them in bulk.
Characteristics
Typical are the slender, black-grey to brown spikes, which clearly differ from classic round peppercorns. Compared to conventional black pepper, long pepper shows a more complex profile with sweet and earthy notes and a pleasantly warm, lingering heat.
