Product information "Organic long pepper | whole | 2-5 cm | black"
What is it about / Product description
Biova organic long pepper is a whole pepper spice from Indonesia with 2–5 cm long, black-grey catkins. The dried fruit spikes resemble small catkins and are valued as a fine black pepper spice in sophisticated cuisine.
The organic quality and the careful selection of the whole pepper catkins ensure an even grain size, intense seasoning and a warm, complex heat. Gentle drying preserves the essential oils so that the aroma emerges fresh and multi-faceted when crushed in a mortar or ground.
In the kitchen, long pepper shows its strengths in both savoury and sweet dishes, from braised dishes to desserts. Use the catkins whole, broken or freshly crushed to refine your recipes with the characteristic sweet-warm heat of Biova.
Origin
The pepper comes from Indonesia, where the tropical climate, high humidity and nutrient-rich soils provide ideal conditions. In these growing regions, the typical sweet-spicy aroma with warm heat develops, which makes long pepper so sought-after.
Cultivation / Production / Harvest
The climbing pepper plants grow on trellises or trees and are cultivated under controlled organic farming conditions. The 2–5 cm long fruit spikes are harvested by hand, gently sun- or air-dried and then selected as whole catkins to ensure a high-quality bulk product.
Special features
Characteristic are the elongated, black-grey catkins, which differ clearly from round pepper. Compared to classic black pepper, this variety is more aromatically complex, with sweet and earthy notes as well as a more intense yet warm heat, which Biova deliberately preserves through gentle processing.
Differences in origin and processing
Indonesian long pepper is characterised by a warm, spicy and slightly sweet aroma that is closely linked to the climate and soil. Hand selection and slow drying distinguish these pepper catkins from industrially processed qualities and ensure uniform colour and reliable heat.
Taste & smell
Sensory-wise, long pepper offers a sweet-spicy profile with earthy undertones and a cinnamon-like component. When crushed, it unfolds a warm scent reminiscent of winter spices, whose heat builds up slowly, lasts long and harmonises particularly well with hearty, aromatic dishes.
