Product information "Organic Malabar Black Pepper, whole peppercorns"
Product description
Organic Malabar pepper comes from India’s Malabar Coast and appears as deep black whole peppercorns with an intense, concentrated aroma. Grown in the Kerala region, this spice combines tropical climate and fertile soils to create a distinctive black pepper.
The whole peppercorns and broken pieces preserve the essential oils particularly well and deliver a consistently strong, stable heat. Careful hand-picking, natural sun-drying and gentle packing in bulk for Biova all help to maintain a consistently high organic quality.
Freshly ground in a mill, organic Malabar pepper enhances meat, fish, vegetables, soups and sauces alike. This typical Malabar character can be used deliberately in everyday cooking as well as in professional kitchens.
Origin
The pepper berries come from India, from the highlands of the Malabar Coast in the state of Kerala. High humidity, abundant rainfall and nutrient-rich soils support slow growth and a dense aromatic profile that meets Biova’s standards for origin and quality.
Cultivation / production / harvest
The pepper is grown in mixed cropping systems on smallholder farms, far from intensive monocultures. The still green berries are harvested by hand at optimum ripeness, then gently sun-dried, carefully sorted and packed in bulk for Biova.
Characteristics
Compared with standard pepper, this Malabar pepper has a high content of essential oils, which results in a dense, long-lasting aroma. Whole black peppercorns and larger pieces support long shelf life of flavour and fragrance and are ideal for pepper mills and professional use.
Differences in origin and processing
Pepper from the Malabar Coast is known for its balanced heat and fruity depth, while other origins are often hotter but less complex. The combination of hand harvesting, natural sun-drying and careful sorting preserves more natural aromatic compounds and underlines Biova’s commitment to quality.
Taste & aroma
On the palate, this pepper shows an intensely fruity, warm and spicy profile with clear but not overpowering heat. On the nose, notes of ripe fruit, fine spice and a hint of earthiness come to the fore; when ground, the black peppercorns release a multi-layered pepper aroma.
