Product information "Organic Malabar Black Peppercorns, whole"
Product description
Organic Malabar pepper comes from the Malabar Coast in Kerala in southern India and is supplied as deep black whole peppercorns with an intense, concentrated aroma. The tropical climate and nutrient-rich soils shape the character of this distinctive black pepper.
The whole, broken peppercorns preserve the essential oils particularly well and deliver a consistently strong, full-bodied heat. Careful hand-picking, natural sun-drying and gentle packing for Biova ensure a consistently high organic quality.
Freshly ground in a mill, organic Malabar pepper enhances meat, fish, vegetables, soups and sauces alike. This makes it easy to bring the typical Malabar note into everyday cooking as well as professional kitchens.
Origin
The pepper berries come from India, from the highlands of the Malabar Coast in the state of Kerala. High humidity, abundant rainfall and fertile soils promote slow growth and a dense aromatic profile that meets Biova’s quality standards.
Cultivation / production / harvest
The black pepper is grown in mixed crops on smallholder farms, far from intensive monocultures. The still green berries are harvested by hand, then gently sun-dried, carefully sorted and packed as whole peppercorns for Biova.
Special features
Compared to standard pepper, this Malabar pepper has a high content of essential oils, which results in a rich, long-lasting aroma. Whole black peppercorns and larger pieces support the long shelf life of flavour and fragrance and are ideal for pepper mills and professional use.
Differences in origin and processing
Pepper from the Malabar Coast is known for its balanced heat and fruity depth, while other origins are often hotter but less complex. The combination of hand-harvesting, natural sun-drying and careful sorting preserves more natural aromatic compounds and underlines Biova’s commitment to quality.
Taste & aroma
On the palate, it shows an intensely fruity, warm and spicy profile with a clear but not overpowering heat. On the nose, notes of ripe fruit, fine spice and a hint of earthiness come to the fore; when ground, the black peppercorns release a multi-layered pepper aroma.
