Cultivation / Production / Harvest

At Biova’s partner saltworks, seawater is channelled into shallow ponds and concentrated solely by sun and wind. After natural crystallisation, the salt is harvested by hand, gently dried and sieved to the medium grain size of 1.0–1.6 mm.

Characteristics

Its defining feature is the medium, granulated structure, which is ideal for bulk supply and for use in spice grinders. As a white Mediterranean sea salt in organic quality, it is a staple base ingredient in the Biova range and fits perfectly with a pure, natural seasoning style.

Origin and processing differences
