Product information "Organic Nacional Cocoa Beans, roasted 50–54%"
Product description
Organic Nacional cocoa from Ecuador consists of roasted cocoa beans in whole, brown chunks with a natural fat content of around 50–54%. They are an aromatic base for chocolate, desserts and cocoa drinks in artisan production, bakeries and foodservice.
Biova’s gentle roasting preserves the characteristic aromas of Nacional cocoa and supports consistent processing. The high cocoa butter content makes the beans easier to grind and allows precise dosing in professional recipes.
In your production you can use Biova organic cocoa with great flexibility – from pure snacking to chopped cocoa beans in muesli, through to refined processing into cocoa mass, pralines or spreads. This way you keep full control over texture, roast level and flavour profile in your individual cocoa creations.
Origin
The cocoa beans come from Ecuador, a traditional origin for fine Nacional cocoa. The tropical climate with constant temperatures and regular rainfall ensures even ripening and stable raw material quality.
Cultivation / production / harvest
The cocoa is grown in line with organic standards without synthetic pesticides and fermented after harvest. The beans are then gently dried, moderately roasted for Biova and packed in bulk units of approx. 1.05 kg.
Special features
The Nacional variety is known for its complex, finely aromatic profile and is highly valued by chocolatiers. Whole, brown beans in chunk form offer high flexibility, from coarse crushing to fine grinding, with a fat content of around 50–54%.
Origin and processing differences
Ecuadorian Nacional cocoa differs from bulk cocoa through its fine, partly floral and fruity notes. Biova’s carefully tuned roasting highlights these nuances and enables a clear sensory signature in chocolate, baked goods and desserts.
Taste & aroma
Sensory analysis shows an intense cocoa profile with balanced bitterness and subtle fruity and nutty notes. The aroma is reminiscent of high-quality dark chocolate with fine roast accents and is ideal for sophisticated dessert and beverage applications.
Suggested uses
- Use whole or chopped cocoa beans in muesli, porridge, yoghurt and bowls.
- Process into your own chocolates, pralines, cocoa mass and spreads.
