Product information "Organic red Kampot peppercorns PGI, whole, Cambodia"
Product description
Organic Kampot pepper from the protected Kampot region in Cambodia is one of the most characterful pepper varieties. Here it is offered as fully ripe, whole red berries. The corns show an intense red colour and develop a clearly defined, fruity-spicy aroma with a pronounced heat.
The tropical climate, nutrient-rich clay soils and traditional smallholder cultivation shape the quality of this organic bulk spice with Protected Geographical Indication (PGI). At Biova, every batch is carefully checked to provide professional users with a consistently high-quality base for refining, packing and foodservice.
In the kitchen, red Kampot pepper is best used freshly ground or crushed in a mortar and enhances meat, fish, poultry, vegetables, sauces and pasta. Use the whole peppercorns to give dishes an expressive, finely nuanced seasoning and to strategically upgrade your Biova bulk spice range.
Origin
The pepper berries come from the protected Kampot growing region in the south of Cambodia, near the coast of the Gulf of Thailand. Humid, hot weather, regular rainfall and heavy clay soils create ideal conditions for this Biova speciality.
Cultivation / production / harvest
Cultivation takes place on small farms in line with organic standards, without artificial fertilisers or synthetic pesticides. Only fully ripe red berries are harvested. They are hand-picked, sorted and gently sun-dried before entering the Biova bulk trade as whole peppercorns.
Special features
Fully ripe red pepper from Kampot is a rarity, as the late harvest is only possible in small quantities. The unhulled, whole peppercorns impress with an almost fruity, sweet-spicy note and clear heat, making them ideal as a premium bulk product for spice manufacturers, fine food packers and gastronomy.
Differences in origin and processing
Unlike pepper from mass cultivation, Kampot pepper is produced in limited quantities and with a high level of craftsmanship. The red variety is obtained exclusively from fully ripe berries and is gently sun-dried, resulting in a multi-layered aroma profile with a clearly defined regional character.
Taste & aroma
Organic red Kampot pepper has a warm, intense and complex fragrance with subtle fruity notes. On the palate, a distinct yet well-balanced heat combines with sweet-spicy nuances and a long finish, which comes into its own when the whole corns are freshly ground shortly before serving.
