Origin

The cacao beans for this blend come from the Dominican Republic, Peru, Madagascar, Sierra Leone and Ghana. A tropical climate, high humidity and nutrient-rich soils support slow ripening and a complex, layered aroma profile.

Cultivation / Production / Harvest

The organic cacao is predominantly grown in mixed-crop systems under shade trees. After harvesting, the beans are fermented for several days, gently dried, then roasted at Biova, broken and separated from their shells to produce pure roasted cacao nibs.
