Organic Tellicherry black peppercorns, whole, TGSEB, 1.05 kg

Product information "Organic Tellicherry black peppercorns, whole, TGSEB, 1.05 kg"

Product description

Biova organic Tellicherry pepper comes from Kerala in southern India and is one of the most distinctive black pepper varieties. The berries are harvested when almost fully ripe, gently dried and offered as whole peppercorns with a black to reddish-brown sheen.

Thanks to the large berry fraction in TGSEB grade, this pepper delivers a warm, intense heat and a complex aroma. Careful selection and cleaning make this organic pepper particularly attractive for foodservice, fine food retailers and discerning home kitchens.

In the kitchen, organic black Tellicherry pepper is a versatile all-purpose pepper for meat, vegetables, stews and sauces. Freshly ground in a mill or crushed in a mortar, it reveals its typical Tellicherry bouquet and enhances everyday dishes as well as creative menus.

Origin

The pepper berries for this Biova pepper come from the Periyar Nature Reserve in the Indian state of Kerala on the Malabar Coast. The tropical climate with high humidity and stable temperatures promotes particularly aromatic growth and a clearly defined origin.

Cultivation / processing / harvest

The pepper is grown in traditional mixed cropping systems on natural supports. The berries are harvested when almost fully ripe, then gently sun-dried, graded by size and packed for Biova as whole peppercorns in 1.05 kg bulk units.

Special features

The TGSEB grade (Tellicherry Garbled Special Extra Bold) stands for particularly large, heavy berries and precise sorting. Thanks to the extended ripening time, the black to reddish-brown peppercorns develop a warm, multi-layered aroma with nutty nuances.

Differences in origin and processing

Unlike standard pepper from mixed growing regions, Tellicherry pepper comes from a limited area on the Malabar Coast. The late harvest, selective choice of whole berries and the defined grading as cracked / whole ensure a spice quality that is clearly distinguishable both in flavour and appearance.

Taste & aroma

Organic Tellicherry pepper tastes robust, warm and pleasantly hot, with nutty and slightly woody notes. Its aroma is subtly reminiscent of tea or sandalwood, lingers on the palate and, when freshly ground, unfolds a complex pepper bouquet.

Suggested uses

  • As an all-purpose pepper, freshly ground for meat, poultry, game, vegetables and grilled dishes.
  • For seasoning sauces, soups, stews, curries and vegetarian dishes in professional and home kitchens.
  • For table pepper mills and as an aromatic base in spice blends, rubs and marinades.
