Product information "Organic Tellicherry pepper | whole"
What it is / Product description
Biova Organic Tellicherry Pepper comes from Kerala in southern India and is one of the most distinctive black pepper varieties. The almost fully ripe berries are gently dried and offered as whole peppercorns with a black to reddish-brown sheen. This gives you an aromatic spice with clearly defined origin and high-grade bulk quality.
Thanks to the large berry fraction of the TGSEB (Tellicherry Garbled Special Extra Bold) quality grade, this pepper offers a warm, intense heat and a multi-layered aroma. Hand-selected whole corns ensure consistent quality, ideal for professional kitchens, fine food retailers and discerning home cooks. Biova focuses on careful processing and transparent sourcing from a limited growing region.
In the kitchen, Organic Tellicherry Pepper proves to be a versatile all-purpose pepper for meat, vegetables, stews and sauces. For best results, use the whole corns freshly ground from the mill or crushed in a mortar to release the full Tellicherry aroma. This way you refine everyday dishes as well as creative menus with a balanced, aromatic heat.
Origin
The pepper berries come from the Periyar Nature Reserve in the Indian state of Kerala on the Malabar Coast. The tropical climate with high humidity and stable temperatures offers ideal conditions for aromatic pepper vines. The clearly defined origin allows reliable control of the quality and typical character of this Biova pepper.
Cultivation / Production / Harvest
The pepper plants grow in traditional mixed cultures on natural supports. The berries are harvested only at an almost fully ripe stage, then gently sun-dried and carefully graded by size. Only the largest and finest whole corns are packed as bulk goods in Biova units of 1.05 kg each.
Special features
The TGSEB quality grade stands for particularly large, heavy berries and thorough cleaning and sorting. Due to the longer ripening time, the corns turn reddish-brown and develop a complex, warm aroma with nutty nuances. Compared to conventional black pepper, this late-harvest variety is more intense, rounder and visually more uniform.
Differences in origin and processing
In contrast to standard pepper from mixed growing regions, Tellicherry pepper comes from a clearly limited area on the Malabar Coast. The late harvest, selective sorting of whole corns and the defined grain size "cracked / whole" clearly distinguish it from common mixed qualities. The result is a premium spice that clearly stands out both sensorially and visually.
Taste & aroma
In taste, Organic Tellicherry Pepper is strong, warm and pleasantly hot, accompanied by nutty and slightly woody notes. The aroma subtly recalls tea or sandalwood and lingers on the palate for a long time. Freshly ground, the black to reddish-brown corns unfold their full, multi-layered pepper bouquet.
