What is it about / Product description

Organic Timut pepper is the Nepalese variety of Sichuan pepper and comes from the high altitudes of the Himalayas. The whole red fruit husks exude an intense citrus and grapefruit aroma and bring fresh heat to your kitchen.

In Biova organic quality, this spice is gently dried and hand-selected so that the essential oils and the typical tingling on the tongue are largely preserved. The bulk product with whole grading is ideal for spice manufacturers, gastronomy and ambitious home cooks.

Origin

The red fruit husks come from the mountainous regions of Nepal in the Himalayas. Altitudes of over 2,000 metres, cool nights and clear air promote slow growth and a particularly concentrated aroma profile of the Biova raw material.

Cultivation / Production / Harvest

The shrubs grow predominantly wild on slopes and at forest edges and are only used with care. After full ripeness in autumn, the husks are harvested by hand, dried in the sun until they burst open, and then filled as whole pieces as bulk goods.

Special features

Characteristic are the medium heat, tingling effect and the slightly numbing feeling on lips and tongue, as known from Sichuan pepper. The aroma is mainly found in the husk wall, which in organic quality and whole grading is particularly interesting for professional users.

Differences in origin and processing

Compared to Chinese Sichuan pepper, the Nepalese variety shows more pronounced grapefruit and citrus notes. Manual harvesting and drying in the clear mountain air of the Himalayas preserve a complex, fresh fragrance profile that Biova specifically focuses on.

Taste & aroma

On the nose, grapefruit, lime and fine floral notes dominate. On the palate, it unfolds a pleasant, medium-hot spiciness with typical tingling and a slight numbness, harmoniously combining citrus freshness and peppery warmth.
