Organic tonka beans from Venezuela are among the most characterful spices used in fine patisserie. The whole, dark brown seeds are carefully selected by Biova and develop a complex vanilla-almond aroma with warm caramel notes when grated.
Thanks to controlled organic cultivation, traditional fermentation and gentle drying, the beans retain their intense fragrance profile. Each tonka bean is very economical and, thanks to its hard structure, can be dosed precisely, which makes it particularly interesting for sophisticated cuisine.
When used in the kitchen, freshly grated organic tonka beans refine desserts, creams, ice cream and chocolate, but also selected savoury dishes. This creates sophisticated compositions with little effort, in which the typical vanilla-almond aroma of the tonka bean subtly takes centre stage.
Origin
The tonka beans come from Venezuela, where the tropical climate with high humidity and warm temperatures offers ideal conditions for the tonka tree. Selected growing areas provide raw material with a particularly warm, intense aroma in consistent Biova quality.
Cultivation / Production / Harvest
The trees are cultivated in accordance with the guidelines of organic farming, without synthetic plant protection products. After harvesting, the seeds are removed from the fruits, fermented and gently dried before the whole beans are cleaned and packed for Biova.
Special features
In contrast to pre-ground spices, these tonka beans are offered as whole beans so that the aroma is only freshly released when grated. This supports a long shelf life and enables very fine, needs-based dosing for patisserie and creative cuisine.
