Organic tonka beans | whole | 2-3 cm

Product information "Organic tonka beans | whole | 2-3 cm"

What it is / Product description

Biova organic tonka beans come from certified organic cultivation in Brazil and are offered as whole seeds about 2–3 cm in length. The black-brown beans are considered a fine spice with an intense fragrance of vanilla, almonds, woodruff and hay.

Thanks to fermentation and gentle drying, the essential oils are largely preserved, resulting in a particularly expressive aroma. Whole beans are very economical, as just a few grated shavings are enough to create a distinct flavor.

In desserts, pastries, ice cream or aromatic sauces, Biova organic tonka beans can be used in many ways and precisely dosed. They enrich creative home cooking as well as professional patisserie and offer an aromatic alternative to classic vanilla.

Origin

The tonka beans grow in Brazil, where the tonka tree finds optimal conditions in the tropical climate with high humidity. Nutrient-rich soils and plenty of sunshine promote a complex aroma profile, which Biova sources from selected regions.

Cultivation / Production / Harvest

The trees are predominantly cultivated in mixed crops, which supports near-natural growth. After harvesting, the seeds are removed from the fruits, fermented and slowly dried until they develop their typical black-brown, slightly wrinkled surface.

Special features

Compared to ground products, whole tonka beans retain their aroma significantly longer, as the surface is only opened when grated. The organic quality and gentle processing at Biova make them a premium ingredient for fine desserts and creative cuisine.

Differences in origin and processing

Brazilian tonka beans are characterized by a harmonious interplay of sweet, spicy and slightly bitter notes. Traditional on-site fermentation supports the development of the characteristic vanilla-almond fragrance and ensures homogeneous bulk goods.

Taste & aroma

The aroma of the tonka bean is reminiscent of vanilla, bitter almond, caramel, woodruff and fresh hay. The sweet-warm, slightly bitter note gives dishes depth and complexity, with just a few shavings intensely flavoring desserts, drinks or sauces.
