Organic white Kampot peppercorns, whole (PGI)

Product information "Organic white Kampot peppercorns, whole (PGI)"

Product description

Organic Kampot pepper from Cambodia is one of the most sought-after gourmet peppers and is offered here as whole white peppercorns. The tropical climate and nutrient-rich clay soils allow the berries to ripen slowly and develop a clean, finely structured aroma.

At Biova, the white pepper comes from certified organic cultivation with Protected Geographical Indication (PGI) and is harvested by hand and sun-dried. Gentle processing and strict selection ensure consistent quality, making it particularly suitable for foodservice, artisan producers and resellers.

In the kitchen, organic Kampot pepper is a subtle yet precise seasoning for light-coloured dishes. Grind or crush the whole corns fresh over fish, poultry, vegetables, light sauces and soups to bring out the typical Biova aroma exactly where you want it.

Origin

The pepper berries come from the southern Kampot region of Cambodia, which is protected as a PGI. High humidity, warm temperatures and heavy clay soils create ideal conditions for intensely aromatic pepper.

Cultivation / processing / harvest

Cultivation takes place on small farms following organic standards without synthetic crop protection agents. Fully ripe, reddish berries are harvested by hand, soaked in water, stripped of their outer skin and then gently dried in the sun.

Special features

Biova combines organic quality, PGI origin and traditional processing to create a distinctive white pepper. The whole peppercorns in chunk form are ideal for pepper mills, mortars and use in bulk with consistent quality and full traceability.

Differences in origin and processing

Kampot pepper is subject to strict regional regulations for cultivation, harvesting and processing. Turning fully ripe red berries into white pepper by soaking and peeling produces a milder, cleaner aroma without the dark skin and clearly sets it apart from standard pepper from other growing regions.

Taste & aroma

White Kampot pepper has a fine, fresh, slightly floral fragrance with a delicate spicy note. On the palate it delivers a clear, aromatic heat that highlights dishes precisely without overpowering them.

Suggested uses

  • Delicate seasoning of light poultry, fish and seafood with freshly ground pepper.
  • Refining vegetable dishes, mashed potatoes, risotto and light soups.
  • Use in light sauces, dressings and dips where black pepper specks would be visually distracting.
