Product information "Organic white peppercorns, whole"
Product description
Organic white pepper made from whole peppercorns delivers a clean, direct heat and a light, creamy appearance. The berries come from certified organic farming and are supplied by Biova as a reliable staple spice for professional kitchens.
Once the outer skin has been removed, the berries are gently dried to create a single-origin, uniform pepper with an even grain size. Biova’s bulk format ensures consistent quality, ideal for artisan producers, high-volume users and in-house packing.
White peppercorns are perfect for light-coloured sauces and soups, as well as fish and poultry dishes where dark specks are not desired. The whole berries can be used flexibly in pepper mills or added to stocks, marinades and pickling liquids and removed after cooking.
Origin
The organic pepper berries come from Sri Lanka and Vietnam, where the tropical climate and nutrient-rich soils support aromatic growth. Smallholder farms supply the raw material in line with organic standards.
Cultivation / production / harvest
The pepper plants are grown in mixed-crop systems and harvested by hand once the fruits are fully ripe. The berries are then soaked in water, freed from skin and pulp, and sun-dried until they develop their typical white colour.
Special features
Unlike black pepper, organic white pepper is made from fully ripe fruits whose outer husk is completely removed. This produces a smooth, pale peppercorn with direct heat and a subtle flavour that works particularly well in refined cuisine.
Differences in origin and processing
Pepper from Sri Lanka offers a well-balanced heat profile, while Vietnam is known for consistent quality and uniform grain size. Traditional water-soaking and sun-drying methods shape the colour and aroma of these white peppercorns.
Taste & aroma
Organic white pepper has an intense, long-lasting heat with a comparatively mild pepper aroma. On the nose it is clear, slightly earthy and less fruity than black pepper, allowing it to blend discreetly into delicate dishes.
Suggested uses
- Seasoning light soups and cream sauces without visible dark specks.
- Finishing fish, poultry and vegetable dishes straight from the pepper mill.
- Using whole pepper berries in stocks, broths, marinades and pickling liquids, then removing them before serving.
