Organic whole ajwain (king’s cumin)

Product information "Organic whole ajwain (king’s cumin)"

Product description

Biova organic ajwain is an aromatic spice from India with small brownish‑green seeds in whole form. Also known as king’s cumin, the seeds look similar to caraway but deliver an intense, thyme-like aroma with warm, lightly peppery notes.

Whole ajwain seeds retain their full flavour right up to cooking and release their essential oils especially well when briefly toasted in hot oil. Biova relies on carefully tested organic food quality, ideal for foodservice, artisan producers and demanding home kitchens.

In curries, dal, vegetable stir-fries or savoury baked goods, organic ajwain adds a distinctive, warming spice. It enhances both classic Indian dishes and modern plant-forward cooking with its striking, thyme-like flavour profile.

Origin

This ajwain comes from certified organic farming in India, where the warm, rather dry climate and well-drained soils support the development of essential oils. For Biova, batches are selected for sensory quality and a uniform brown‑green colour.

Cultivation / production / harvest

The plants are grown organically without synthetic pesticides. After flowering, the umbels are harvested and gently dried, then the ripe seeds are threshed out, cleaned and graded by size into broken and whole seeds.

Special features

King’s cumin is characterised by a high content of thymol-rich essential oils, which are responsible for its intense, thyme-like aroma. The whole seeds allow flexible use – freshly crushed in a mortar or left as visible seeds in the finished dish.

Differences in origin and processing

Depending on the growing region, heat, herbaceous notes and earthy undertones can vary, with Indian grades often particularly intense. Gentle drying at moderate temperatures preserves the delicate oils, a key criterion for Biova when selecting bulk quantities.

Taste & aroma

Ajwain has a strong, spicy fragrance clearly reminiscent of thyme, with peppery and earthy nuances. On the palate it is warm, intense and herbaceous; even small amounts give dishes a distinctive, concentrated aromatic spice.
