Product information "Organic whole mace 2.5–3.2 cm"
Product description
Biova organic mace comes from certified organic cultivation in Sri Lanka and is offered as whole pieces of about 2.5–3.2 cm. The reddish-brown arils surrounding the nutmeg seed develop a warm, spicy and slightly sweet aroma.
Gentle drying and careful selection preserve most of the essential oils in the mace, resulting in a clear flavour profile that is easy to dose. The whole product in catering packs is ideal for professional kitchens, as it has a long shelf life and is highly versatile.
In the kitchen, organic mace refines potato dishes, cream soups, light sauces and vegetables as well as desserts, pastries, punch and mulled wine. The whole pieces can be freshly grated or simmered whole and removed before serving.
Origin
This mace comes from nutmeg trees grown in Sri Lanka, where the tropical climate with high humidity and stable temperatures provides ideal conditions. Selected organic growing areas supply Biova with aromatic mace of consistent quality.
Cultivation / processing / harvest
The nutmeg trees are grown organically without synthetic crop protection agents. After harvesting, the red aril is separated from the nutmeg seed, gently dried, cleaned and sorted as whole pieces in the 2.5–3.2 cm size range, then prepared for foodservice bulk use.
Special features
Mace is the delicate aril of the nutmeg seed and is considered the more elegant form of nutmeg spice. In whole form, its aroma keeps longer than in ground products, and the red to reddish-brown colour also makes Biova’s bulk mace visually appealing.
Differences in origin and processing
Depending on origin, mace can range from robust and spicy to fine and elegant. Biova’s organic mace from Sri Lanka is characterised by a well-balanced nutmeg aroma without harsh or dull notes, supported by gentle drying and careful processing.
Taste & aroma
Mace has a warm, spicy and slightly sweet fragrance with the typical nutmeg character. On the palate it shows subtle clove notes, a hint of caramel and a delicate bitterness that adds depth to dishes without overpowering other ingredients.
