Product information "Organic whole tonka beans, 2–3 cm"
Product description
Biova organic tonka beans come from certified organic cultivation in Brazil and are offered as whole seeds, around 2–3 cm in length. The dark brown to almost black beans are an intensely aromatic spice with fine notes of vanilla, almond, woodruff and hay.
Gentle fermentation and drying largely preserve the essential oils, creating a powerful, long-lasting aroma. Whole beans are very economical to use, as just a few finely grated shavings are enough to give dishes a distinct flavour and are easy to dose.
Organic tonka beans are extremely versatile in desserts, pastries, ice cream and aromatic sauces, and support creative recipe ideas. They enhance both home cooking and professional patisserie as a characterful alternative or complement to classic vanilla.
Origin
The tonka beans grow in Brazil, where the tonka tree finds ideal conditions in the tropical climate with high humidity. Nutrient-rich soils and plenty of sunshine promote a complex aroma profile, which Biova sources from selected growing regions.
Cultivation / production / harvest
The trees are mainly grown in mixed cultures, supporting near-natural growth. After harvesting, the seeds are removed from the fruits, traditionally fermented and slowly dried until they develop their typical blackish-brown, slightly wrinkled surface.
Key features
Compared with ground product, whole tonka beans retain their aroma significantly longer, as the surface is only exposed when grated. Their organic quality and Biova’s gentle processing make them a premium ingredient for fine desserts and creative spice blends.
Differences in origin and processing
Brazilian tonka beans are known for their harmonious balance of sweet, spicy and slightly bitter notes. Carefully controlled on-site fermentation supports the characteristic vanilla–almond fragrance and ensures consistent quality in bulk supply.
Taste & aroma
The aroma of tonka beans is reminiscent of vanilla, bitter almond, caramel, woodruff and fresh hay. Their sweet-warm, slightly bitter note adds depth and complexity to dishes, with just a few shavings giving desserts, drinks or sauces an intense flavour.
