Biova organic tonka beans come from certified organic cultivation in Brazil and are supplied as whole seeds about 2–3 cm long. These dark brown to black beans are an intensely aromatic spice with notes of vanilla, almond, woodruff and hay.
Gentle fermentation and slow drying preserve most of the essential oils, creating a powerful, long-lasting aroma. Whole beans are very economical to use, as just a few finely grated shavings are enough to give dishes a distinct flavour.

Origin
The tonka beans grow in Brazil, where the tonka tree finds ideal conditions in the tropical, humid climate. Nutrient-rich soils and plenty of sunshine promote a complex aroma profile, which Biova sources from selected regions.
Cultivation / processing / harvest
The trees are mainly grown in mixed cultures, supporting natural-style growth. After harvesting, the seeds are removed from the fruit, fermented and slowly dried until they develop their typical black-brown, slightly wrinkled surface.
