Organic tonka beans from Venezuela are among the most distinctive spices used in fine patisserie. The whole, dark brown seeds are carefully selected for Biova and, when grated, release a complex vanilla–almond aroma with warm caramel notes.

Thanks to certified organic cultivation, traditional fermentation and gentle drying, the beans retain their intense fragrance profile. Each tonka bean is highly aromatic and, due to its firm texture, can be grated and dosed very precisely – a key advantage in professional kitchens.

Freshly grated organic tonka beans refine desserts, creams, ice cream and chocolate, but also selected savoury dishes. With very little effort you can create sophisticated flavour compositions in which the typical vanilla–almond character of tonka subtly takes centre stage.

Origin

These tonka beans come from Venezuela, where the tropical climate with high humidity offers ideal conditions for the tonka tree. Selected growing areas supply raw material with a warm, intense aroma in consistently high Biova quality.

Cultivation / production / harvest

The trees are grown in accordance with organic farming standards, without synthetic crop protection agents. After harvesting, the seeds are removed from the fruit, fermented, gently dried and then cleaned and packed as whole beans for Biova.

Unlike pre-ground spices, these tonka beans are supplied whole so their aroma is only released when freshly grated. This supports a long shelf life and allows very fine, on-demand dosing for patisserie and creative cooking.
