Product information "Organic whole tonka beans from Venezuela"
Product description
Organic tonka beans from Venezuela are among the signature spices of fine patisserie. The whole, dark brown seeds are carefully selected for Biova and, when grated, develop an intense vanilla–almond aroma with warm caramel notes.
Thanks to certified organic cultivation, traditional fermentation and gentle drying, the beans retain their complex fragrance profile. Each tonka bean is highly aromatic and, due to its firm texture, can be finely dosed – ideal for professional kitchens and ambitious pastry chefs at home.
Freshly grated organic tonka beans refine desserts, creams, ice cream and chocolate as well as selected savoury dishes. With very little effort you can create sophisticated compositions in which the typical tonka bean aroma is subtle yet clearly defined.
Origin
These tonka beans come from Venezuela, where the tropical climate and high humidity provide ideal conditions for the tonka tree. Selected growing areas supply raw material with a warm, intense aroma in consistent Biova quality.
Cultivation / Production / Harvest
The trees are grown in accordance with organic farming standards, without synthetic crop protection agents. After harvesting, the seeds are removed from the fruit, fermented, gently dried and then cleaned and packed as whole beans for Biova.
Special features
Unlike pre-ground spices, these tonka beans are offered whole, so their aroma is only released when freshly grated. This supports a long shelf life and allows very precise, on-demand dosing for patisserie and creative cooking.
Differences in origin and processing
Depending on the country of origin, tonka beans vary in intensity and aromatic nuances. Venezuelan beans are known for their pronounced vanilla–almond profile with fine caramel notes, which is further deepened by careful fermentation and drying.
Taste & aroma
The fragrance profile is reminiscent of vanilla, bitter almond, caramel and delicate spice notes. On the palate, the beans are warm, slightly sweet and very aromatic, so even small amounts give dishes an elegant, unmistakable character.
