This rare Patagonia pepper from the south of Chile comes from the Magellanic winter bark and is offered as whole berries. Characteristic of this pepper are the initially mild, sweet notes, followed by distinctly sharper accents with a slightly numbing effect on the tongue. Origin
The pepper comes from Patagonia in the south of Chile, a region with a cool, humid climate and evergreen rainforests. These conditions allow the berries of the Magellanic winter bark to ripen slowly and develop a complex aroma. Biova sources the raw material directly from selected growing areas.
Cultivation / Production / Harvest
The evergreen shrubs can grow up to 20 metres high and bear fragrant white flowers from which bluish berries develop. Harvesting usually takes place between March and May, when the fruits have reached their full aroma. They are then gently dried and prepared as whole, black chunks for further processing.

Patagonia pepper differs significantly from classic black pepper, as botanically it belongs to the Drimys species. The combination of a sweet, fruity start, cinnamon-like notes and a delayed onset of heat makes it a very special spice.
