Product description
Petalos salt flakes from Spain are delicate white rock salt flakes with a fine to flaky grain size of 0.1–8.0 mm. The light Biova crystals are ideal as a decorative finishing salt for professional kitchens and food service.
Because they are produced from controlled rock salt brine in a closed system, the flakes retain their typical leaf-like structure and consistently high Biova quality. The bulk product is easy to handle, dose precisely and pack in many different formats.
In everyday cooking as well as in fine dining, these mild salt flakes add a subtle crunch to meat, fish, vegetables, salads or fresh bread. Thanks to their structure you can crumble the flakes between your fingers and use them as a finger salt directly on the plate.
Origin
The salt flakes come from a mountain region in the Spanish province of Alicante, around 40 km from the Mediterranean Sea. Here, the traditional La Fortuna saltworks uses a natural rock salt brine, while the sunny, dry climate supports even crystallisation.
Cultivation / production / harvest
The rock salt brine is carefully fed into a closed system and concentrated mainly by sun and wind. The resulting salt petals are skimmed off by hand, selected, gently dried and packed as fine to flaky salt flakes in bulk.
Special features
These white rock salt flakes are characterised by their irregular, leaf-like structure and a grain size of 0.1–8.0 mm. No additives are used, resulting in a natural Biova flake salt that enhances dishes visually and in texture and is ideal as a finger salt at the table.
Differences in origin and processing
Unlike sea salt flakes from open seawater saltworks, this flake salt is based on a controlled inland rock salt brine. The closed system reduces external influences and ensures consistent quality, while slow crystallisation and manual processing clearly distinguish the delicate flakes from industrially milled table salt.
Taste & aroma
Petalos salt flakes taste pleasantly mild and salty and are less sharp than finely ground table salt. Thanks to their airy structure, the flakes dissolve slowly on the tongue, remain neutral in aroma and allow the natural flavour of the food to take centre stage.
