Cultivation / Production / Harvest
The pepper plants grow in mixed cultures on climbing supports and are harvested by hand at full ripeness. Immediately after harvest, the fresh black fruits are turned in moist, unrefined sea salt and dried in the sun. This process is repeated several times until the desired level of fermentation, residual moisture and grain size as whole chunks is achieved.

In contrast to classic black pepper, the whole corns are deliberately fermented, which breaks down part of the piperine. The intense pepper aroma is preserved by the protective salt coating and at the same time appears rounded and harmonious. While conventional black pepper is usually only sun-dried and then cleaned, Pondicherry Pepper undergoes an additional fermentation stage in sea salt.
