Product description

Our Salish Alderwood smoked salt starts with natural sea salt that is gently cold-smoked over alder wood. The coarse brown granules (1–3 mm) look similar to traditional foods smoked over wood.

Several days of cold smoking in the Biova manufactory give this smoked salt an intense yet well-balanced smokiness with a mild saltiness. Careful processing ensures an even colour, stable aroma and reliable quality for bulk buyers.

In the kitchen, Salish Alderwood smoked salt adds an authentic smoky note to grilled dishes, stews, salads and vegetarian food. Thanks to its coarse grain size, the granulated smoked salt is ideal for grinders, BBQ rubs, marinades and custom spice blends.

Origin

The sea salt comes from selected coastal regions in Germany and Croatia with clean sea air and a temperate climate. In Germany it is artisanally refined into alderwood smoked salt at the Biova production site.

Cultivation / production / harvest

The sea salt is obtained by evaporating seawater and then gently dried. Biova then cold-smokes the coarse granules for up to 16 days over alder wood, with several smoking intervals, turning and aeration.

Characteristics

Typical are the natural alderwood smoke aroma, the mild salinity and the granulated grain size of around 1–3 mm. The brown smoked salt is supplied in bulk, specifically for high-volume users, foodservice and spice mills.

Differences in origin and processing

Slight differences in the mineral content of the German and Croatian salt sources subtly influence crystal structure and solubility. Traditional cold-smoking over alder wood clearly sets this smoked salt apart from industrially flavoured products.

Taste & aroma

On the palate, a mild, well-balanced saltiness combines with a clearly perceptible but not overpowering smokiness. The aroma recalls freshly smoked foods and a classic alderwood fire, without any artificial notes.
