Cultivation / processing / harvest

The shrubs are grown semi-wild or under low-intensity cultivation and harvested in autumn, once the berries are fully ripe and bright red. After picking, the fruit clusters are traditionally sun-dried, causing the husks to open and forming the characteristic light, red-brown seed capsules in whole pieces.

Differences in origin and processing

Compared with other Zanthoxylum types such as timut or sansho pepper, Szechuan pepper from Sichuan is more robust and less floral. Traditional sun-drying in the region of origin gives it a characteristic, slightly resinous aroma and an even level of drying, which Biova consistently takes into account.

Taste & aroma

On the nose it shows an intense fragrance with a pronounced citrus note reminiscent of grapefruit and lime, rounded off by subtle resin nuances.
