The salt comes from underground salt deposits in the hinterland of Catalonia in Spain, which are the remnants of an ancient primordial sea. The dry Mediterranean climate and the geological stability of the region ensure particularly pure rock salt deposits. Biova sources the salt directly from these traditional mining areas.
Cultivation / Production / Harvest
Spanish rock salt is obtained by mining, gently extracted from the salt deposit and then purified. It is subsequently finely ground to achieve a uniform grain size of 0.3–0.5 mm, ideal for daily use. No chemical additives or anti-caking agents are used in order to preserve its natural character.
Special features
Its characteristic feature is the naturally high potassium content, which leads to a sodium reduction of around 25–40% compared to conventional table salt. Accompanying minerals such as iron provide the slightly pink appearance and a mild flavor profile. In contrast to many sodium-reduced salts, this product does not require added lysine hydrochloride, as no pronounced bitterness develops.
