Green Sichuan pepper comes from China and is a characteristic Asian spice with a fresh citrus note and fine, tingling heat. The whole, green-dried fruit husks of the Zanthoxylum shrub are reminiscent of grapefruit, lime and fresh herbs. Origin
The pepper comes from China, mainly from Sichuan province with warm summers and cool winters. The climate and partly higher altitudes offer ideal conditions for Zanthoxylum shrubs. For Biova, only lots with typical green color and pronounced citrus notes are selected.
Cultivation / Production / Harvest
The shrubs are mostly cultivated extensively and only moderately pruned to promote natural growth. The green berries are harvested shortly before full ripeness, when fragrance and aroma are particularly intense. The fruit husks are then gently dried, cleaned and prepared as whole berries for further processing as bulk goods.
Special features
Botanically, it is not true pepper, but the fruit husks of the Zanthoxylum plant. The green variety shows a fresh, bright aroma with slightly earthy undertones and differs significantly from red Sichuan.
