This Thar Desert Salt comes from the natural salt lakes of the Thar Desert in Pakistan and, after drying, is sieved into a coarse granule of 0.1–5.0 mm. The cream-grey natural salt is formed from brine-rich spring and lake water that crystallises under intense sun. It is suitable as a characterful table salt for everyday cooking.
Due to the region’s lack of industrial activity, the natural variety of minerals in the salt is largely preserved. Thar Desert Salt is processed in a modern saltworks where it is only washed, dried, granulated and packed, without chemical additives. In the kitchen, the granules impress with their strong, slightly tart salty taste, which is versatile in use. Origin
The salt comes from the Thar Desert in the border region between Pakistan and India, near the Arabian Sea. In this dry, sunny region, salty lakes are formed when brine-rich water from underground veins reaches the surface. The sparsely populated, largely industrially untouched landscape contributes to the natural purity of the salt.
Cultivation / Production / Harvest
The brine-rich water collects in shallow basins, where it slowly evaporates through sun and wind. Naturally crystallised salt layers remain, which are gently harvested and then cleaned. In Biova’s partner production, the salt is dried, sieved to the granule size 0.1–5.0 mm and filled as bulk goods.
Special features
Thar Desert Salt is one of the spring water and lake salts and is characterised by its cream-grey, slightly irregular appearance. In contrast to refined table salt, it is left in its natural state and is not chemically bleached or mixed with anti-caking agents. The coarse grain size makes it ideal for mills and for applications where the salt should dissolve slowly.
Differences in origin and processing
Compared to classic sea salts from coastal regions, this desert salt is formed inland from underground brine. Evaporation under extremely dry conditions leads to compact crystals with an intense flavour. Thanks to the gentle processing and the pure source water, Thar Desert Salt differs both sensorially and visually from many other white lake salts in the Biova range.
Taste & aroma
Sensory-wise, the salt offers a strong, clear salty taste with a slightly tart note. On the palate it is less sharp than highly refined table salt and supports the intrinsic flavours of the food. In terms of aroma, it is neutral, without disturbing off-notes, and therefore highly versatile.
