Product information "Tonka beans | whole | 2-3 cm | origin: Brazil"
What it is / Product description
Tonka beans from Brazil are among the most characterful spices in modern patisserie and creative cuisine. The whole, almond-shaped seeds with a deep dark, almost black surface are offered by Biova as intensely aromatic bulk goods. Their multi-layered tonka bean aroma makes them an exciting alternative and complement to classic vanilla.
Due to their high content of essential oils, the black beans develop an intense fragrance and flavor profile even in the smallest quantities. Biova relies on gentle drying, careful selection and clean processing into broken or whole beans. This way you receive a high-yield spice of consistent quality that can be precisely dosed and used for a long time when stored appropriately.
In use, tonka beans refine desserts, baked goods and drinks as well as selected savory dishes. Finely grated or simmered in liquids, they give creams, ice cream, puddings or sauces a warm, sweet note. This allows you to use the characteristic tonka bean aroma in a targeted way as a fine trend spice in your kitchen.
Origin
The tonka beans offered come from Brazil, one of the most important cultivation areas of the tonka tree in South America. The tropical climate with high humidity and intense sunlight promotes the development of complex aromas. Biova sources the raw material from selected regions with established quality standards.
Cultivation / Production / Harvest
The tonka fruits grow on tall trees and are harvested by hand when fully ripe. After an initial drying step, the seeds are removed from the pods and gently dried further until they develop their typical black, slightly wrinkled surface. The whole beans are then cleaned, selected and packed as bulk goods in kilo units for processors and large-scale users.
Special features
Characteristic is the exceptional aromatic density, reminiscent of vanilla, almonds, marzipan, woodruff and hay. As whole, black beans in broken or whole-bean grading, the essential oils are optimally protected and the shelf life is long. With a fine grater, the beans can be dosed precisely and freshly grated over dishes.
Differences in origin and processing
Depending on the country of origin and microclimate, the intensity and nuances of the aroma vary. Brazilian qualities often show a harmonious, well-balanced flavor profile with pleasant sweetness. The careful drying and storage practiced by Biova supports a clean, rounded bouquet without off-notes.
Taste & aroma
The aroma of tonka beans is warm, sweet and complex. On the nose, notes of vanilla, almonds and marzipan dominate, accompanied by hints of woodruff and dried hay. On the palate, the spice is intense yet soft and rounded, so that even very sparing use is sufficient.
