Product description

Banasura pepper from the Wayanad district in India is known for its exceptionally large, deep black peppercorns. It delivers an intense, warm, spicy aroma with long-lasting heat and is ideal for ambitious kitchens.

A cross of the Karimunda and Panniyur varieties, harvested late at full ripeness and gently sun-dried, produces a black pepper with outstanding pungency. Hand selection and careful processing as bulk goods ensure consistent Biova quality, especially for foodservice and small-scale producers.

In the kitchen, the whole black pepper shows its full character when freshly crushed in a mortar or coarsely ground. Use it to finish steaks, braises, sauces, stocks and bespoke spice blends with a clearly defined, finely balanced pepper note.

Origin

The pepper berries come from India, from the area around the Banasura Sagar Dam in the Wayanad district of Kerala. Tropical climate, abundant rainfall and fertile soils create ideal conditions for this black pepper, considered a rarity in the Biova range.

Cultivation / production / harvest

The pepper plants grow as climbers on tall support trees and reach heights of up to 12 metres. They are harvested fully ripe from mid to late March, then the whole berries are sun-dried, hand sorted and packed as whole black bulk pepper in units of approx. 1.05 kg.

Special features

Typical are the unusually large, whole peppercorns with intense pungency and uniform size. Limited growing area, specific breeding and traditional processing make this pepper a sought-after speciality in the Biova spice range.

Differences in origin and processing

Compared with standard pepper, this pepper is harvested later and comes from the Karimunda x Panniyur cross. Altitude, microclimate and manual sorting after sun-drying result in a complex aroma and particularly striking, whole corns.

Taste & aroma

On the nose, the pepper offers an intense, warm, spicy aroma with slightly earthy and subtly fruity notes. On the palate it is powerful, with well-balanced heat and a long, full-bodied finish that comes into its own when freshly ground.
