Product information "Whole Bhutan pepper from wild harvest"
Product description
Biova Bhutan pepper comes from the high-altitude regions of the Himalayas and is botanically related to Sichuan pepper. The whole dried seed husks release a fresh citrus aroma with notes of lemon and grapefruit.
Thanks to natural wild harvesting and gentle drying, this creates a pure, aromatic lemon pepper with mild heat and the typical tingling sensation on the tongue. Biova relies on careful hand selection to optimally preserve the essential oils and complex aroma.
In the kitchen, Bhutan pepper is extremely versatile – from Asian-inspired dishes to contemporary fusion cuisine. Grind or crush the whole husks just before serving to capture the full citrus aroma and add a fresh accent to dishes such as fish, poultry or desserts.
Origin
This pepper comes from Bhutan, a Himalayan country with dramatic altitude differences and largely untouched nature. Pure mountain air, predominantly forested slopes and minimal industry encourage wild pepper plants with an intense aroma.
Cultivation / production / harvest
Bhutan pepper is not grown on plantations but collected as a wild-growing Sichuan-type pepper. Local farmers carefully pick the ripe seed husks by hand, dry them gently in the mountain air and then sort them manually for Biova.
Special features
This is a wild sub-variety of Sichuan pepper with smaller husks and an exceptionally intense citrus aroma. The fine tingling and mild heat make this lemon pepper ideal for delicate spice blends and modern seasoning compositions.
Differences in origin and processing
Compared with Sichuan pepper from other regions, this citrus pepper grows in the high alpine zones of Bhutan under strong temperature fluctuations. Exclusive wild harvesting results in smaller yields but a more concentrated aroma and underlines the authentic character of this Biova Himalayan spice.
Taste & aroma
The fragrance is intense, fresh and distinctly citrusy with hints of lemon and grapefruit. On the palate it shows mild heat with the typical tingling and a slight bitterness, creating a complex, long-lasting flavour experience.
