Biova Bhutan pepper comes from the high-altitude regions of the Himalayas and is botanically related to Sichuan pepper. The whole, dried seed husks are brown-red in colour and offer a fresh citrus aroma.

Wild harvesting only, gentle air-drying and careful hand selection create a natural lemon pepper with mild heat and a fine tingling sensation. This way, the essential oils and characteristic aroma are optimally preserved.

In the kitchen, Bhutan pepper is ideal for finishing fish, poultry, seafood and creative desserts with precision. Grind or crush the husks just before serving to make full use of the fresh citrus aroma.

Origin

This spice comes from Bhutan, a Himalayan kingdom with dramatic altitude differences and largely untouched nature. Clear mountain air and a cool climate favour slow-growing, particularly aromatic shrubs.

Cultivation / production / harvest

This lemon pepper grows wild and is not cultivated on plantations. Local collectors harvest the ripe husks by hand, gently air-dry them and sort them manually to ensure consistent Biova quality.

Special features

This is a wild subspecies of Sichuan pepper with smaller, very aromatic husks. The combination of fresh citrus notes, mild heat and fine bitterness makes it ideal for modern spice blends and creative Biova-style cooking.

Compared with Sichuan pepper from other regions, this pepper grows in the high alpine zones of Bhutan with strong temperature fluctuations. Exclusive wild harvesting and processing without additives ensure a concentrated aroma and an authentic, original character.

Taste & aroma

The fragrance is intense, fresh and citrus-forward with notes of lemon and grapefruit. On the palate it shows mild heat with the typical tingling sensation and a long-lasting, slightly bitter-fresh finish.
