Biova Bhutan pepper comes from the high-altitude regions of the Himalayas and is botanically related to Sichuan pepper. The whole, dried seed husks release a bright citrus aroma with notes of lemon and grapefruit.
Natural wild harvesting and gentle drying create a pure, aromatic lemon pepper with mild heat and a fine tingling on the tongue. Careful hand selection for Biova helps preserve the essential oils and the full complexity of its aroma.
In the kitchen, Bhutan pepper is extremely versatile – from Asian-inspired dishes to contemporary fusion cuisine. Grind or crush the whole husks just before serving to capture the full citrus notes and add a fresh accent to fish, poultry or desserts.
Origin
This pepper comes from Bhutan, a Himalayan country with dramatic altitude differences and largely untouched nature. Clean mountain air, forested slopes and very little industry favour wild pepper plants with an intense citrus aroma.
Cultivation / production / harvest
Bhutan pepper is not grown on plantations but collected as a wild-growing Sichuan type. Local farmers hand-pick the ripe seed husks, dry them gently in the mountain air and then sort them by hand for Biova.
Characteristics
This is a wild subspecies of Sichuan pepper with smaller husks and a distinctly fresh citrus fragrance. Its mild heat and typical tingling make this lemon pepper ideal for delicate spice blends and modern Biova seasoning compositions.
Origin and processing differences
Compared with Sichuan pepper from other regions, this citrus pepper grows in the high alpine zones of Bhutan with strong temperature fluctuations. Exclusive wild collection results in smaller harvests but a more concentrated aroma and highlights the original character of this Himalayan spice from Biova.
