Origin
This pepper comes from the Kampot region in the south of Cambodia near the Gulf of Thailand. The tropical climate, high humidity and nutrient-rich clay soils create optimal conditions for this Biova pepper specialty, protected by PDO status.
Cultivation / Production / Harvest
The plants grow on traditional pepper poles and are cared for predominantly by hand. Green, still unripe berries are harvested and sun-dried, undergoing natural fermentation and developing into intensely aromatic black peppercorns before being graded as whole corns for Biova.
Special features
Cultivation takes place without mineral fertilisers and without synthetic pesticides. Hand harvesting, sun-drying and careful hand-sorting result in a homogeneous bulk product with large, attractive berries, tailored to the needs of professional kitchens and spice packers.
