Whole black Malabar pepper

Product information "Whole black Malabar pepper"

Product description

Malabar pepper from the highlands of India’s Malabar Coast is one of the most characterful black pepper varieties, with an intense, fruity-spicy aroma. The deep black whole peppercorns are ideal for foodservice, spice blenders and demanding home kitchens.

Grown by smallholders, from lower-yielding vines and gently sun-dried, this pepper offers a high content of essential oils and a clearly defined flavour profile. Biova carefully selects every lot to ensure consistently high-quality bulk pepper with reliable grain size.

In the kitchen this black pepper is highly versatile: freshly ground from the mill for final seasoning, or used whole for cooking. Use Malabar pepper with meat, fish, vegetables, sauces, stews and your own spice blends.

Origin

The pepper vines grow in the south-west Indian state of Kerala on the Malabar Coast. The tropical climate, high humidity and regular rainfall promote intense aroma development and ensure consistent Biova quality.

Cultivation / processing / harvest

The pepper is grown in mixed cropping systems on small plots, where the climbing plants grow up shade-giving trees. The spikes are harvested by hand and sun-dried for several days until the berries develop their deep black colour, firm texture and concentrated aroma.

Key features

This is a traditional, lower-yielding variety with particularly aromatic berries and a high content of essential oils. The combination of protected growing area, careful hand harvesting, natural sun-drying and Biova’s bulk-focused selection makes this pepper a reliable choice for professional users.

Origin and processing differences

Unlike pepper from large-scale monocultures with a strong focus on yield, Malabar pepper comes from smallholder structures with limited volumes. Gentle sun-drying without mechanical dryers preserves the typical Malabar notes and clearly sets it apart from industrially processed standard grades.

Taste & aroma

On the nose it shows a warm, intensely spicy aroma with fruity, slightly woody and subtly smoky nuances. On the palate this black pepper develops a pronounced, long-lasting yet well-balanced heat, making it ideal for final seasoning directly at the table.
