Product information "Whole black Malabar peppercorns from Kerala"
Product description
Malabar pepper comes from the highlands of India’s Malabar Coast and is one of the most characterful black pepper varieties, with an intense, fruity-spicy aroma. The deep black whole peppercorns are ideal for foodservice, spice producers and demanding professional or home kitchens.
Thanks to smallholder cultivation, naturally lower-yielding vines and gentle sun-drying, the berries develop a high content of essential oils and a clear, expressive pepper profile. Every lot is carefully selected for Biova to ensure consistently high-quality bulk pepper.
In the kitchen, this black pepper performs equally well in everyday cooking and fine dining: freshly ground from the mill for finishing, or as whole corns for cooking in liquids. This makes Malabar pepper a flexible choice for meat, fish, vegetables, sauces, stews and your own spice blends.
Origin
The pepper vines grow in the south-west Indian state of Kerala on the Malabar Coast. The tropical climate, high humidity and regular rainfall create ideal conditions for intensely aromatic black pepper in consistent Biova quality.
Cultivation / processing / harvest
The pepper is grown in mixed cropping systems on small plots, where the climbing plants grow up shade-giving trees. The spikes are harvested by hand and sun-dried for several days until the corns develop their typical black colour, firm texture and concentrated aroma.
Special features
This is a traditional, naturally lower-yielding variety with particularly aromatic berries and a high content of essential oils. The combination of protected growing area, hand harvest, natural sun-drying and Biova bulk quality makes this pepper a reliable choice for professional kitchens and spice manufacturers.
Origin and processing differences
Unlike pepper from large-scale monocultures focused on maximum yield, Malabar pepper comes from smallholder structures with limited volumes. Gentle sun-drying without mechanical dryers preserves the typical Malabar notes and clearly sets it apart from industrially processed standard grades.
Taste & aroma
On the nose it offers a warm, intensely spicy aroma with fruity, slightly woody and subtly smoky notes. On the palate this black pepper develops a pronounced, long-lasting yet well-balanced heat, making it ideal for final seasoning directly at the table.
