Origin
The berries for this citrus pepper come from remote mountain regions of Nepal on the edge of the Himalayas. Cool altitudes, clean air and nutrient-rich soils promote slow ripening and a complex citrus aroma, which Biova consistently harnesses for premium spice quality.
Cultivation / production / harvest
This mountain pepper grows mainly wild or in near-natural structures rather than in intensive plantations. After being harvested by hand, the whole berries are gently dried in small batches in airy drying huts, then cleaned, graded as a bulk product and packed in bags of approx. 1.05 kg.
Characteristics
