Origin
The berries for this citrus pepper come from remote mountain regions of Nepal on the edge of the Himalayas. Cool altitudes, clean air and nutrient-rich soils promote slow ripening and a complex citrus aroma, which Biova harnesses for high-grade spice quality.
Cultivation / production / harvest
This mountain pepper grows mainly wild or in near-natural structures, not in intensive plantations. After being harvested by hand, the whole berries are gently dried in small batches, cleaned, sorted and packed as bulk goods in bags of around 1.05 kg.

Botanically, this mountain pepper differs clearly from classic Piper nigrum and is sometimes assigned to other plant families. Its focus is a multi-layered citrus profile with grapefruit and lime notes, while the mild heat enhances dishes without overpowering them.
