Product information "Whole Mac Khen pepper from Vietnam"
Product description
Mac Khen pepper is a rare Vietnamese pepper speciality with whole black berries and a warm, complex aroma. It looks similar to classic black pepper, but offers fruity-citrus and slightly sweet notes.
Gentle drying preserves most of the essential oils, creating an aromatic yet unobtrusive heat. At Biova you receive this special pepper as a convenient bulk pack in a bag of approx. 1.05 kg for foodservice, small producers and ambitious home kitchens.
In the kitchen, Mac Khen pepper is ideal for grinding fresh directly over finished dishes or as a characterful component in spice blends. Biova pepper brings variety to meat, fish and vegetable dishes as well as to creative sauces, stocks and Asian-inspired recipes.
Origin
The peppercorns come from selected growing regions in Vietnam with a tropical climate and abundant rainfall. On well-drained slopes, the plants develop a particularly intense, aromatic profile, which Biova secures through careful selection of batches.
Cultivation / production / harvest
The berries are traditionally harvested by hand once they have reached optimum ripeness. They are then gently air-dried before being cleaned, graded and packed as whole peppercorns in bags of around 1.05 kg for professional use.
Key features
Compared to common black pepper, Mac Khen pepper offers a multi-layered aroma profile with spicy, citrusy and slightly sweet nuances. Whole berries allow you to choose the grind size from coarse in a mortar to fine in a mill, making this Biova spice particularly versatile for foodservice and home kitchens.
Origin and processing differences
The combination of Vietnamese highland locations, fertile soils and traditional air-drying gives Mac Khen pepper its high aromatic density and balanced heat. Unlike pepper from other origins, it shows a clear, elegant flavour that Biova maintains through consistent quality control.
Taste & aroma
On the palate, this pepper convinces with warm, peppery heat, fine citrus and herbal notes and a subtle sweet undertone. When crushed, the essential oils are released and give dishes a clear, aromatic seasoning without dull or burnt notes.
