Product description
This Kampot pepper from southern Cambodia is one of the rarest pepper specialities and is prized by professional chefs worldwide. The fully ripe red berries appear reddish-brown and develop an intensely fruity, warm aroma.
Thanks to the tropical, humid climate and mineral-rich clay soils, this spice develops an exceptionally dense aroma. Traditional cultivation without artificial fertilisers or chemical crop protection and careful manual work ensure consistently high Biova quality.
In the kitchen, red Kampot pepper shows its full character when freshly ground in a mill or crushed in a mortar. Its combination of heat, fruity notes and subtle sweetness is a perfect match for meat, fish, vegetables and refined sauces.
Origin
The pepper berries come from the Kampot region in southern Cambodia, close to the coast of the Gulf of Thailand. The tropical climate, high humidity and abundant rainfall create ideal conditions for this Protected Geographical Indication (PGI).
Cultivation / production / harvest
Cultivation is carried out by small farms that rely on traditional methods and pure manual labour. Fully ripe red berries are harvested by hand, gently washed and slowly dried before being packed as whole peppercorns as Biova bulk goods.

Genuine red pepper from Kampot is a rare speciality, as only a small part of the crop is left on the vine to reach full maturity. The unhulled berries retain their essential oils and deliver a complex, fruity-warm aroma that clearly stands out from standard pepper.
Differences in origin and processing
Compared with pepper from other growing regions, Kampot pepper impresses with a particularly multi-layered aroma and very uniform grain size. The red variety is created solely through a high degree of ripeness and gentle drying, not by colouring, and is rigorously selected at Biova.
