Discover Tellicherry pepper from Kerala in southern India – one of the finest black pepper varieties for professional kitchens. The berries are harvested when almost fully ripe, giving them a reddish-brown to black colour and an exceptionally large, uniform grain size.

Origin
The pepper berries come from the state of Kerala on India’s Malabar Coast, mainly from the region around the Periyar Nature Reserve. The tropical climate, abundant rainfall and fertile soils create ideal conditions for Biova’s aromatic pepper specialities.
Cultivation / production / harvest
The pepper plants grow as climbers on support trees and are cultivated in small plots. For Tellicherry grades, the berries are harvested when almost fully ripe, gently dried and hand-sorted by size and quality according to the TGSEB standard before being packed as whole corns in 1 kg bulk bags.
Special features
Typical are the extra-large grain size, the reddish-brown hue and the warm, slightly nutty aroma that develops through the extended ripening time. The bulk whole pepper offered by Biova is ideal for restaurants, delicatessens and spice manufacturers who depend on consistent quality.
Differences in origin and processing
Unlike standard pepper, which is usually harvested earlier and in larger volumes, Tellicherry pepper comes from selected locations with strict quality control. Taste & aroma
The whole peppercorns deliver a robust yet well-balanced heat with warm, slightly nutty and subtly woody notes. On the nose they evoke tea, sandalwood and dried fruit; when freshly ground they release a multi-layered pepper aroma that adds depth to dishes without overpowering them.
