Whole Tellicherry black pepper TGSEB

Product information "Whole Tellicherry black pepper TGSEB"

Product description

Discover Tellicherry pepper from Kerala in southern India – a selected black pepper speciality with particularly large, whole berries. Harvested almost fully ripe, the peppercorns range in colour from reddish-brown to black and reflect Biova’s consistently high quality.

Thanks to the late harvest and gentle drying, this pepper develops a warm, complex aroma with a harmonious, lingering heat. In TGSEB grade ("Tellicherry Garbled Special Extra Bold"), Biova offers carefully selected peppercorns as a cost-effective bulk product.

In the kitchen, this late-harvest pepper is ideal for grinding fresh in a mill and should be used sparingly due to its intensity. It is a versatile black pepper for meat, fish, vegetables, sauces and soups – suitable for professional kitchens as well as ambitious home cooks.

Origin

The pepper berries come from the state of Kerala on India’s Malabar Coast, particularly from the region around the Periyar Nature Reserve. The tropical climate, abundant rainfall and fertile soils create ideal conditions for Biova’s aromatic pepper specialities.

Cultivation / production / harvest

The pepper plants grow as climbers on support trees and are cultivated in small plots. For Tellicherry grades, the berries are harvested almost fully ripe, gently dried and hand-sorted by size and quality according to TGSEB standards before being packed as whole berries in 1 kg bulk bags.

Key features

Typical characteristics are the extra-large berry size, the reddish-brown hue and the warm, slightly nutty aroma that develops through the longer ripening time. The bulk product with whole berries offered by Biova is ideal for foodservice, fine food retailers and spice manufacturers who rely on consistent quality.

Differences in origin and processing

Unlike standard pepper, which is usually harvested earlier and in larger quantities, Tellicherry pepper comes from selected locations with strict quality control. The late harvest as a late-picked pepper and the elaborate hand-sorting to TGSEB standards result in a more complex aroma and strikingly large berries.

Taste & aroma

The whole peppercorns deliver a robust yet well-balanced heat with warm, slightly nutty and subtly woody notes. On the nose they evoke tea, sandalwood and dried fruit; when freshly ground they release a multi-layered pepper aroma that adds depth to dishes without overpowering them.

Suggested uses

  • Grind fresh over steaks, roasts, game dishes and fish for a fragrant, spicy finish.
  • Refine sauces, soups, stews and vegetable dishes in both home and professional kitchens.
  • Use as an all-purpose black pepper in mills for kitchens, fine food production and spice manufacturers.
