Discover whisky pepper as an aromatic pepper speciality, where selected black Tellicherry pepper is refined with Bourbon whisky. The whole peppercorns mature in oak barrels and develop a slightly moist, amber-coloured surface.

At least seven days of maturation create a soft, easy-to-crush bulk seasoning with a rounded, warm aroma and 8.9% vol alcohol. The combination of Tellicherry quality, controlled residual moisture and careful small-batch processing at Biova ensures consistent quality.

In the kitchen, whisky pepper is highly versatile and ideal for meat dishes, pasta, sauces and creative pairings with fruit and desserts. Freshly ground, it releases the full Biova aroma with a clearly perceptible whisky note.

Origin

The black Tellicherry peppercorns come from India’s Malabar Coast, known for its tropical climate and fertile soils. The pepper is refined, oak-aged and packed in Germany at the Biova manufactory.

Cultivation / processing / harvest

Fully ripe pepper berries are sun-dried on site and shipped to Germany as whole peppercorns. There they mature for at least seven days in Bourbon whisky, are turned regularly and then gently drained in oak barrels.

This speciality combines Tellicherry pepper with Bourbon whisky and an alcohol content of 8.9% vol. Around 32% residual moisture ensures soft, easily crushed corns, intense aroma and a black-brown colour – ideal for foodservice and fine food retailers.

Differences in origin and processing

Unlike classic black pepper, this pepper speciality undergoes an additional maturation step in alcohol. Oak-barrel refinement to Biova quality standards clearly sets it apart from standard bulk pepper.

Taste & aroma

On the palate, the pepper is pungent and peppery with a clearly noticeable whisky note. Warm, gently smoky Bourbon aromas combine with the spicy Tellicherry heat and subtle woody nuances to create a long, savoury finish.
