At least seven days of maturation in whisky create a soft, easy-to-crush product with a rounded, warm aroma and 8.9% vol. alcohol. The combination of Tellicherry quality, controlled residual moisture and careful small-batch processing makes this pepper an attractive choice for professional kitchens, gastronomy and fine food retailers.

In use, whisky pepper is remarkably versatile: it pairs beautifully with steaks, game dishes, pasta with mushrooms or robust sauces, and also with desserts, fruit and chocolate. Freshly ground, it releases the full Biova aroma with a clearly perceptible whisky note.

Origin

The black Tellicherry peppercorns come from the traditional growing region on India’s Malabar Coast, known for its tropical climate and fertile soils. The pepper is refined, matured in oak barrels and packed in Germany at the Biova manufactory.

Cultivation / Production / Harvest

The fully ripe pepper berries are sun-dried on site and shipped to Germany as whole peppercorns. There they mature for at least seven days in Bourbon whisky, are turned regularly and then gently drained in oak barrels before being packed as bulk product.

Characteristics

This speciality combines Tellicherry pepper with Bourbon whisky and has an alcohol content of 8.9% vol. Around 32% residual moisture ensures soft, easily crushed corns, intense aroma and an attractive black-brown colour – ideal for professional users and the creative Biova spice kitchen.

Differences in origin and processing

Unlike classic black pepper, this pepper speciality undergoes an additional maturation process in alcohol. Refinement in oak barrels to Biova quality standards clearly sets it apart from standard bulk pepper and results in a distinct, whisky-forward flavour profile.

Taste & aroma

On the palate, the pepper is pungent and peppery with a clearly noticeable whisky note. Warm, gently smoky Bourbon aromas combine with the spicy heat of Tellicherry and fine woody nuances to create a long, savoury finish.
