Origin

Timut pepper comes from Nepal, mainly from high-altitude regions of the Himalayas from around 2,000 metres. The cool mountain climate, clean air and nutrient-rich soils promote slow growth and a high concentration of essential oils.

Cultivation / production / harvest

The husks ripen in autumn and are harvested by hand by local farmers. They are then dried in the sun until the shells open; for Biova, the aromatic red husk walls are selected as whole pieces and gently packed as a bulk product.

Special features

Botanically, Timut pepper does not belong to the true pepper species but to the rue family, which explains its intense citrus aroma. The coarse grading, red colour and slightly tingling mouthfeel clearly distinguish it from classic black pepper and make it particularly interesting for Biova spice blends.
