Product information "Whole Timut Pepper"
Product description
Discover Timut pepper from the Nepalese Himalayan regions, a rare variety of Sichuan pepper with a striking citrus aroma. The small red husks are offered as whole pieces and give dishes a distinctive tingling heat.
Biova supplies this Timut pepper as a uniform product with defined size and colour, ideal for professional kitchens, spice blenders and ambitious home cooks. Careful selection supports consistent quality during processing and further refinement.
In the kitchen, Timut pepper is perfect for Asian dishes, modern fusion cuisine and creative desserts. Used whole or coarsely crushed, the husks add fresh notes of grapefruit and lime and bring a clear citrus component to stir-fries, marinades and pepper blends.
Origin
Timut pepper comes from Nepal, mainly from high-altitude Himalayan regions from around 2,000 metres. The cool mountain climate, clean air and nutrient-rich soils promote slow growth and a high concentration of essential oils.
Cultivation / production / harvest
The husks ripen in autumn and are harvested by hand by local farmers. They are then sun-dried until the shells open; for Biova, the aromatic red husk walls are selected as whole pieces and gently packed.
Special features
Botanically, Timut pepper is not a true pepper but belongs to the rue family, which explains its intense citrus aroma. The coarse grading, red colour and light tingling sensation in the mouth clearly distinguish it from classic black pepper and make it particularly interesting for Biova spice blends.
Differences in origin and processing
The altitude and specific climate of Nepal create an especially clear, fruity profile compared with other Sichuan pepper varieties. Traditional sun-drying in the region of origin and additional hand selection at Biova ensure a uniform quality with a low proportion of broken pieces.
Taste & aroma
On the nose, Timut pepper recalls grapefruit, lime and fine floral notes on a warm, spicy base. On the palate it shows medium heat with a tingling, slightly numbing effect on lips and tongue, giving dishes a fresh, citrusy clarity.
