Product information "Whole Voatsiperifery pepper from Madagascar"
Product description
Voatsiperifery pepper from the rainforests of Madagascar is a rare wild pepper with irregular whole black berries and a distinctive, characterful aroma. Also known as Bourbon pepper or jungle pepper, it is ideal for high-end kitchens and artisan spice producers.
Thanks to slow ripening in a tropical climate and careful hand-picking, this pepper offers consistently reliable quality, which Biova supplies in bulk to foodservice and fine food retailers. Its minimally processed nature underlines its authentic origin.
In the kitchen, Voatsiperifery pepper adds depth and spice to hearty dishes, dark sauces and braises. Freshly ground, it is excellent with game, lamb and beef, for pepper mills and for bespoke pepper blends.
Origin
This wild pepper comes exclusively from the tropical rainforests of Madagascar, mainly from the warm, humid regions of the east coast. Nutrient-rich soils and high humidity shape the typical character of this rare pepper speciality.
Cultivation / processing / harvest
Voatsiperifery grows as a climbing vine that winds its way up trees to heights of up to 20 metres and is not cultivated in classic plantation systems. The ripe berries are hand-picked by smallholders, gently dried and selected as whole berries for Biova.
Key features
With only a few tonnes harvested worldwide each year, this jungle pepper is one of the rarest pepper varieties. The combination of wild growth, manual harvesting and single-origin processing makes it a sought-after speciality for Biova’s fine food, foodservice and spice industry customers.
Origin and processing differences
Compared with classic black plantation pepper, Voatsiperifery pepper has a more rustic appearance with variations in size and shape. Its wild origin remains clearly visible, while Biova’s close cooperation with local partners ensures gentle processing and consistent quality.
Taste & aroma
On the palate, this wild pepper from Madagascar delivers a pleasantly warm heat that seasons dishes without overpowering them. Earthy notes combine with fruity, lemony hints and a slightly resinous, exotic pepper bouquet.
Suggested uses
- Grind fresh over game, lamb, beef and dark poultry.
- Flavour dark sauces, braises, ragouts and stocks.
