Wiri Wiri is a rare cherry chilli from South America, grown predominantly in Ecuador for Biova. The small, round pods, around 1.2–2 cm in size, are a deep, glowing red and bring intense heat to your kitchen.

Gentle drying at Biova preserves the essential oils, colour and pungency of the whole cherry chillies as much as possible. Careful cleaning and grading ensure consistent quality with a well-controllable, powerful heat of around 60,000–150,000 Scoville.

In Guyanese, Caribbean and South American cooking, this cherry chilli gives stews, braises and sauces a distinctive, fruity, tomato-like note. Use the whole pods to add authentic regional heat to your recipes.

Origin

Wiri Wiri originally comes from Guyana; for Biova this cherry chilli is now mainly cultivated in Ecuador. The tropical climate with warm temperatures and high humidity allows the dark red fruits to ripen evenly.

Cultivation / processing / harvest

The plants thrive in open fields under tropical conditions and are only harvested when the deep red pods are fully ripe. Immediately after harvest they are gently dried, then the whole chillies are cleaned, graded by size and packed in bulk units of approx. 1.05 kg.

Typical for this variety is the combination of compact size, high heat level of 60,000–150,000 Scoville and a fruity tomato note. Compared to many other hot chillies, this cherry chilli offers a rounded, aromatic profile with flexible use of the whole pod.

Origin and processing differences

While Wiri Wiri traditionally grows in home gardens in Guyana, Biova quality comes from professional cultivation in Ecuador under controlled conditions. Standardised drying and careful grading of the whole pods ensure consistent heat and a reliably predictable product for foodservice and further processing.

Taste & aroma

This cherry chilli develops an intense, fruity flavour with a clear tomato-like note and strong heat reminiscent of habanero. On the nose it shows warm, slightly sweet, peppery nuances; in dishes it delivers a long-lasting heat without bitterness.
